The origin of macarons

Originally from Italy, the fine macaron pastry came to France in the 16th century, where different recipes developed over time in the many regions. In the 19th century, the Macaron Parisien or Macaron Gerbet delighted the country’s palates, as it was the first to contain a filling made from jam, buttercream or ganache.
